Beef Nihari Shank With Bone
Description
Indian style slow-cooked spiced beef stew prepared with beef shanks in a rich, flavourful gravy with homemade Nihari masala.
INGREDIENTS
- 6 Tail Pepper (Long peppers, pipli)
- 1 tbsp Black Pepper corns.
- 3 Black Cardamom.
- 8 Green Cardamom.
- 2 Cinnamon Sticks.
- 2 tbsp Fennel Seeds(saunf).
- 1 tbsp White Cumin.
- 1 tbsp Black Cumin.
- 10 Cloves
- 2 Star anise
PREPARATION
Whole spices for Nihari Masala
- 2 tbsp Carom seeds (Ajwain)
- 3 Bay Leaves
Nihari (For the Stew)
1 kg Beef Shank meat (cut in 1 1/2 inch pieces)1/2 kg Beef bones with bonemarrow2 cups Oil1/2 cup Ghee3 tsp Ginger paste3 tsp Garlic paste3 tbsp Kashmiri Chili powder3 tbsp Red Chili powder2 tbsp Salt (or to taste)1/2 tbsp Turmeric1 tbsp Coriander powder1/2 tbsp Ground Nutmeg1/2 tbsp Ground Mace1 tbsp Dried Ginger Powder (soonth)1/4 tbsp Citric acid1/2 Cup Wheat Flour + 1 cup Water2 litres Water (approx 8 cups)
Step 3
Cover and cook, skimming broth from time to time, until the beef is tender, about 1 1/2 hours. Add the onions and carrots and simmer, covered, for 10 minutes. Add the potatoes and simmer until vegetables are tender, about 30 minutes more. Add broth or water if the stew is dry. Season with salt and pepper to taste. Ladle among 4 bowls and serve.
